Preheat oven at 180C to bake. Peel your potatoes and keep them in cold water for 10 minutes.<br \/>\n2. Using a mandolin, Alice your potatoes really thin. In a baking tray, place some baking paper with longer edges, then layer up your potatoes and sprinkle pepper, salt and herbs in between each layer.<br \/>\n3. Heat your single cream until it starts bubbling and generously pour all over your potatoes. Give it a little shake so it can go into the nooks and crannies.<br \/>\n4. Baking in the oven for 2.5hrs at 180C. Then using the extended edges, fold them in and use a heavy jar to press. Chill overnight to set.<br \/>\n5. Remove the potato from the dish and cut long strips. Fry these for 4 minutes on high heat (180C) until golden brown and crispy.
