{"id":10340,"date":"2022-05-28T10:11:00","date_gmt":"2022-05-28T02:11:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=10340"},"modified":"2026-03-09T20:47:35","modified_gmt":"2026-03-09T12:47:35","slug":"beef-veggie-breakfast-skillet-sarahsteffens_personalchef","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/beef-veggie-breakfast-skillet-sarahsteffens_personalchef","title":{"rendered":"Beef &amp; Veggie Breakfast Skillet"},"content":{"rendered":"<h2>Beef &amp; Veggie Breakfast Skillet Ingredients<\/h2>\n<p>1 Tbsp ghee<br \/>\n1\/2 yellow onion, peeled &amp; diced<br \/>\n2 garlic cloves, peeled &amp; minced<br \/>\n2 cups cubed butternut squash<br \/>\n1 yellow bell pepper, sliced &amp; seeds removed<br \/>\n1 medium zucchini, diced<br \/>\n1 tsp sea salt<br \/>\n1\/4 tsp black pepper<br \/>\n8 ounces of cooked ground beef<br \/>\n1 tsp smoked paprika<br \/>\n1 tsp ground cumin<br \/>\n1 tsp ground chili powder<br \/>\n2 cups baby kale<br \/>\n1 medium avocado, peeled &amp; diced<br \/>\n5 large eggs<\/p>\n<h2>Garnishes<\/h2>\n<p>1\/4 cup fresh cilantro, minced<br \/>\n1 medium scallion, minced<br \/>\n1 Tbsp hemp seeds<\/p>\n<h2>Instructions<\/h2>\n<p>PREHEAT an oven to 400 F (205 C).<br \/>\nADD ghee to a cast-iron skillet on the stove set to medium heat. Add onion, garlic, butternut squash, yellow bell pepper and zucchini to the skillet. Season with sea salt and black pepper.<br \/>\nSAUTE veggies until soft, about 5-7 minutes.<br \/>\nADD cooked ground beef to the skillet and season with smoked paprika, cumin and chili powder. Stir well with the veggies until the beef is warmed through, then add the baby kale and stir until it is wilted, about 2 minutes.<br \/>\nADD avocado to the skillet.<br \/>\nCRACK eggs directly into the skillet and season with additional optional sea salt and black pepper.
