Sprinkle with salt.<br \/>\nIn a shallow bowl, beat 2 eggs, 2 tbsp water &amp; sprinkle w salt n pepper.<br \/>\nin another plate combine the bread crumbs, Italian seasoning &amp; garlic powder. Add the flour in another plate.<br \/>\nDip the eggplant slice in the flour, then it into the egg &amp; then into the breadcrumbs.<br \/>\nSpray the eggplant with oil &amp; then place them in the airfryer at 1800C &amp; air fry for 12-15 mins or until golden crispy flipping halfway through. Work in batches.<br \/>\nMake an eggplant macro bowl or serve it as a side.
