In a roasting tray, place your artichoke Hearts, Onions, Asparagus, Garlic Bulb and Sage. Coat generously with olive oil and Ad your salt, pepper and cumin. Let it roast for 30 mins at 200C<br \/>\n2. In the meantime let your cashew nuts sit in hot water for 15 minutes. After 15 minutes, keep enough hot water where it just about covers the cashews. Blitz with a hand blender until a creamy consistency.<br \/>\n3. Once the artichokes are roasted add it to pot, removing the garlic peel. Add your stock and hot water mixture. Also combine with the potatoes and any other seasonings to your taste.<br \/>\n4. Let it simmer for 30 minutes on medium heat then blend with a hand blender. The artichokes will peel through the blending process so ensure to sieve out the soup to remove any thick inedible peel.<br \/>\n5. Mix in your cashew nut vegan cream, leaving a little for the top.
