Bring to a boil, lower heat, simmer two hours.<br \/>\nAdd water if necessary to keep chicken covered .<br \/>\nAfter two hours, strain the broth into another large pan.<br \/>\nRemove the chicken meat, discard everything else.<br \/>\nFor extra health benefits, we actually do the same process, but we remove just the chicken meat (not the bones and skin) and simmer another 10 hours.<\/p>\n<h2>Ingredients For Soup<\/h2>\n<p>3 sweet potatoes, peeled<br \/>\n2 Tbs olive oil<br \/>\n1 lg onion, chopped<br \/>\n8 garlic cloves, minced<br \/>\n1 1\/2 cup chopped celery<br \/>\n2 cups chopped carrots<br \/>\n1 tsp ground tumeric<br \/>\n1 Tbs minced ginger<br \/>\n1 1\u20442 tsp dried thyme<br \/>\n3 cups shredded kale<br \/>\n1 1\/2 Tbs fresh rosemary, chopped<br \/>\nsalt and pepper to taste<\/p>\n<h2>For Serving<\/h2>\n<p>Parmesan cheese<br \/>\ngreen onions, sliced<\/p>\n<h2>Directions To Finish Soup<\/h2>\n<p>1. Place oil in large fry pan. Saute\u0301 onions &amp; celery until onions are translucent.<br \/>\n2. Add garlic, tumeric &amp; ginger. Saute 1 minute.<br \/>\n3. Add the onion &amp; celery mixture to the strained bone broth.<br \/>\n4. Cut the sweet potatoes into 1 inch cubes.<br \/>\n5. Add the sweet potatoes, carrots, thyme and rosemary. Simmer 20 minutes.<br \/>\n6. Add kale &amp; reserved chicken meat, simmer 5 minutes.<br \/>\n7. Adjust flavor with salt and pepper.
