{"id":10208,"date":"2022-05-26T08:18:00","date_gmt":"2022-05-26T00:18:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=10208"},"modified":"2026-03-09T20:47:54","modified_gmt":"2026-03-09T12:47:54","slug":"roasted-carrot-chickpea-hummus-anexplorerskitchen","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/roasted-carrot-chickpea-hummus-anexplorerskitchen","title":{"rendered":"Roasted Carrot &amp; Chickpea Hummus"},"content":{"rendered":"<h2>Roasted Carrot &amp; Chickpea Hummu Ingredients<\/h2>\n<p>5 carrots, sliced into 2 inch pieces<br \/>\n1 can chickpeas, with liquid<br \/>\n6 Tb olive oil, divided<br \/>\n1\u20444 cup tahini<br \/>\n3 Tbs lemon juice<br \/>\n2 garlic cloves, minced<br \/>\n1 Tbs cumin seeds<br \/>\n1 Tbs caraway seeds<br \/>\n1 Tbs whole coriander seeds<br \/>\n1 tsp salt<br \/>\n1\u20444 tsp pepper<br \/>\n2 chili&#8217;s from a can of chipotle peppers chopped, with 2 Tbs of their sauce<br \/>\n3 Tbs sunflower seeds<br \/>\n2 Tbs honey<\/p>\n<h2>Directions<\/h2>\n<p>1. Preheat oven to 400 degrees.<br \/>\n2. Toss carrots in 1 Tbs olive oil.<br \/>\nRoast for 35 minutes or until tender.<br \/>\n3. Place caraway, coriander and cumin seeds in a fry pan. Toast while constantly swirling pan for just a few minutes until fragrant and looking just a bit toasted.<br \/>\n4. Grind seeds in a coffee grinder, spice mill, blender or pound with a mortar and pestle.<br \/>\n5. Place carrots, 1\u20442 of the toasted spices (11\u20442 Tbs), chickpeas and liquid, 4 Tbs olive oil, lemon juice, salt and pepper in a blender. Blend until smooth.<br \/>\n6. Toast the sunflower seeds for 1 minute in pan. Add the honey, stir for one minute, being careful not to let burn.<br \/>\n7. Place hummus in serving bowl. Toss the remaining spices with the chili&#8217;s. Place chili&#8217;s on top of hummus.
