Cut sweet potatoes into uniform 1 inch squares. Melt coconut oil, add onions and sweet potatoes, saute\u0301 over medium low heat for 10 minutes being careful that they do not burn, but just carmelize.<br \/>\n2. Stir in ginger, curry paste and grated garlic. Stir another minute. Add broth and coconut milk. Simmer until potatoes are fork tender. Add tamari.<br \/>\n3. Stir in chickpeas and roast turkey\/chicken, stir until warm<br \/>\n4. Top with fresh cilantro and sliced green onions. Serve with cooked rice noodles and lime wedges.
