{"id":10143,"date":"2022-05-25T08:39:00","date_gmt":"2022-05-25T00:39:00","guid":{"rendered":"https:\/\/resepmamiku.com\/en\/?p=10143"},"modified":"2026-03-09T20:48:10","modified_gmt":"2026-03-09T12:48:10","slug":"jackfruit-curry-sarahsteffens_personalchef","status":"publish","type":"post","link":"https:\/\/resepmamiku.com\/en\/jackfruit-curry-sarahsteffens_personalchef","title":{"rendered":"Jackfruit Curry"},"content":{"rendered":"<h2>Jackfruit Curry Ingredients<\/h2>\n<p>2 20-ounce cans of jackfruit ,drained and rinsed<br \/>\n1 tbsp of coconut or avocado oil<br \/>\n1 medium yellow onion, peeled and diced<br \/>\n4 medium garlic cloves, peeled and minced<br \/>\n2 tsps sea salt<br \/>\n1 tsp black pepper<br \/>\n1 tsp ground turmeric<br \/>\n1 tbsp garam masala<br \/>\n1 tsp ground coriander<br \/>\n1 tsp plain or smoked paprika<br \/>\n1 tsp dried red chili flakes<br \/>\n2 tbsps ground yellow curry<br \/>\n1 cup purified water<br \/>\n4 medium sweet potatoes ,peeled and cubed<br \/>\n1 14.5-ounce can of full-fat coconut milk<br \/>\n1 14.5-ounce can of tomato paste<br \/>\n6 cups arugula or baby kale<br \/>\n1 14.5-ounce can of chickpeas ,drained<br \/>\n1\u20444 cup fresh cilantro ,minced<\/p>\n<h2>Garnish<\/h2>\n<p>1\u20444 cup fresh cilantro, minced<\/p>\n<h2>For Serving<\/h2>\n<p>1 tbsp coconut or avocado oil<br \/>\n4 cups cauliflower rice<br \/>\n2 tbsp fresh cilantro, minced<\/p>\n<h2>Instructions<\/h2>\n<p>Add the drained and rinsed jackfruit to a bowl and shred it with your hands so that it resembles shredded chicken. Discard any tough ends.<br \/>\nPlug your Instant Pot in and set it to \u201cSaute\u0301\u201d. Once hot, add the coconut or avocado oil, diced onion and minced garlic. Season with sea salt, black pepper, turmeric, garam masala, coriander, plain or smoked paprika, red chili flakes and yellow curry powder and stir well with a wooden spoon.<br \/>\nSaute\u0301 until the onions are soft and translucent, about 5 minutes.<br \/>\nDeglaze the bottom of the pot by adding in 1 cup of water and scraping the bottom of the pot with your spoon to loosen up any brown bits.<br \/>\nAdd the cubed sweet potatoes, shredded jackfruit and canned coconut milk and stir well to combine. Press \u201cCancel\u201d on your Instant Pot.<br \/>\nSecure the lid and select \u201cPressure Cook\u201d at High Pressure and Natural steam release. Set the cooking time to 8 minutes.<br \/>\nOnce the timer has finished, allow the steam to release naturally for at least 10 minutes before removing the lid.<br \/>\nAt this point, prepare your cauliflower rice by adding coconut or avocado oil and cauliflower rice to a skillet set to medium-low heat and saut\u00e9 until soft, about 5 minutes. Stir in minced cilantro. Set aside until ready to serve.<br \/>\nRemove the lid of your Instant Pot and stir in the canned tomato sauce, arugula or baby kale, canned chickpeas and minced cilantro.<br \/>\nServe with additional minced cilantro and cauliflower rice, storing any leftovers in the fridge for up to 5 days.
